1 medium green cabbage
1 medium yellow onion
3 large carrots, peeled and cut in ¼-inch coins
1/4 cup extra virgin olive oil
1 tsp. sea salt
1 tsp. garlic powder
½ tsp. ground black pepper
½ tsp. oregano
Optional: 3 tbsp. balsamic vinegar
1.Cut the cabbage in half, and then cut that half into 4-6 wedges.
Place those cabbage wedges on a large baking dish and arrange the carrots and onions all around them.
3.Season the vegetables with garlic powder, oregano, salt, and pepper.
4.Drizzle with broth and olive oil.
5.Bake covered for 1 hour and 20 minutes at 350F. Garnish with balsamic vinegar.
