Preheat the oven to 350 degrees F. Line an 8 x 8 inch pan with parchment paper and set aside.
Stir the flaxseed meal and water together in a small bowl and set aside for 10 minutes until the mixture becomes gelatinous.
In a large mixing bowl, combine the cassava flour and baking powder. In a separate bowl, combine the maple syrup, flax eggs, softened butter and vanilla extract until combined.
Mix together the dry and wet ingredients just until combined. Gently fold in the chocolate chunks.
Pour the brownie batter into the lined pan and bake for 20-25 minutes, or until a toothpick comes out clean.
Remove from the oven, let cool completely, and enjoy!
