In a large bowl, mix together the cassava flour, coconut flour, baking powder, and baking soda to make a dry mix.
In the middle of the dry mix make a well in the center and pour in the eggs, milk, melted ghee, and vanilla extract, slowly fold in sides of the dry mix into the wet ingredients until coming together.
Mix normally until smooth.
Heat a lightly greased frying pan over medium heat.
Scoop approximately ¼ cup batter for each pancake onto the frying pan.
Cook first side until the edges are dry and browning and the inside is bubbling.
Flip and cook the second side until brown.
