Ingredients

¾ cup cassava flour

⅓ cup coconut flour

1 teaspoon baking powder, aluminum free

1 ½ cups milk

3 large eggs, lightly beaten

⅓ cup melted ghee or butter

1 tablespoon vanilla extract

¼ cup cacao powder
-
¼ cup chocolate chip cookies
Directions
In a large bowl, combine the cassava flour, coconut flour, cacao powder and baking soda and stir to mix.
Make a well in the center of the dry mixture and pour in the milk, eggs, ghee or butter, and vanilla extract.
Slowly fold in the dry mixture from the sides until the dry and wet ingredients begin coming together, then continue to mix with a whisk until smooth.
Fold in the chocolate chips and mix until evenly distributed.
Lightly grease a large frying pan and place over medium heat. Working in batches, scoop approximately ¼ cup batter for each pancake onto the frying pan.
Cook on the first side until the edges are dry and browning and the centers are bubbling, 1 to 2 minutes, then flip and cook on the second side until brown, 1 to 2 minutes.
Transfer the cooked pancakes to a plate and repeat with the remaining batter.
Serve immediately with maple syrup.
