1.Place potatoes in a large pot and cover the by 1 inch with cool water. Place over medium heat and bring to a boil. Reduce the heat and simmer until the potatoes are tender in the center, 20 to 25 minutes.
2. Reserve some of the cooking water and drain the potatoes in a colander.
3. Return the potatoes to the pot and mash them directly in the pot. Once the potatoes are mostly mashed, add about 1-1 ½ cup of the reserved water and olive oil and mash to desired consistency.
4. Add, ½ cup chopped fresh dill and season with salt and pepper to taste.
