Preheat the oven to 375 degrees.
Melt the coconut oil in a 13x9 baking dish.
Whisk together the flour, baking powder, salt and 1 cup of sugar. Add the milk and stir to combine. Pour this over the melted coconut oil, DO NOT STIR!
Bring the other cup of sugar, peaches, and lemon juice to a boil in a large pot over high heat, stirring constantly. Pour this over the batter and again, DO NOT STIR.
Sprinkle the top with cinnamon and bake for 40-45 minutes or until golden brown. Enjoy!
