Directions
Wash the tigernuts well, then combine them with the water and soak for 24 to 48 hours in the fridge.
Transfer the tigernuts and their soaking liquid to a high-speed blender, add the dates, honey, or maple syrup, if using, and blend until smooth and frothy, 2 to 3 minutes.
Strain the milk through cheesecloth to remove any remaining impurities.
Serve immediately, or store for 4 to 5 days in the refrigerator.
