Preheat the oven to 350 degrees F.
Whisk together the tigernut flour, baking powder, baking soda, and sea salt in a large mixing bowl and set aside.
Stir the oil, vanilla, sugar, and mashed bananas until well combined.
Add the wet ingredients into the dry ingredients and stir just until combined. Do not overmix!
Gently fold in the chocolate chunks.
Spoon the batter into a well-greased or paper-lined muffin tin. Fill them each about 2/3 full.
Bake for 20-25 minutes, or until a toothpick comes out clean.
Cool for 10 minutes and enjoy!
